One of my favorite bloggers, Cyndi, over at Southerndaze, is constantly posting amazing recipes. I’m so glad that she actually remembers to take pictures when she’s making these awesome desserts, but I can’t promise that I’ll do the same.

I’m going to share one that I tried recently for the 4th and loved! My FIL actually finished it off for breakfast the next morning. It’s the easiest dessert I’ve ever made– it’s no bake. Try it and you’ll love it– especially if you love peanut butter and chocolate!

INGREDIENTS
20 chocolate sandwich cookies, crushed
1 (8 ounce) package cream cheese, softened
2 cups confectioners’ sugar
3/4 cup peanut butter
1 (12 ounce) container frozen whipped topping, thawed

DIRECTIONS
Press crushed cookies into the bottom of a 9×13 inch pan, reserving a few for decoration. In a medium bowl, beat together the cream cheese and confectioners’ sugar. Stir in the peanut butter until well blended, then fold in the whipped topping. Spread over the crushed cookie base, sprinkle the remaining cookie chunks on top, and freeze for 1 to 2 hours. Thaw 10 to 15 minutes before cutting and serving.

Though the recipe doesn’t call for it, I would get an extra container of Cool Whip and add it to the top of the dessert before freezing. Then add some Hershey’s chocolate syrup to garnish with the Oreos. Just a suggestion to keep it pretty. It’s SO good!

the guiltiest of pleasures

Our cable is on the fritz and we have been getting a random selection of channels for the past three weeks. One channel that is just fine is the Oxygen network. I’ve started watching “Tori and Dean: Home Sweet Hollywood.” Oh my! I love Jessica and Nick’s “Newlyweds” on MTV and this is a good replacement. Tori and Dean seem to be pretty happy together, but definitely interesting. It’s a great laugh and they have a really cute baby that they affectionately call “Monkey.” It gets a little tiresome to hear Dean call her “T” and Tori call him “Babe,” but I’m still hooked.

Is anyone else watching this? I guess I just thought I’d ‘fess up and let the cat out of the bag that this is probably going to be my summertime entertainment. Other than Boudreaux and Fiona, of course, and the havoc they’re wreaking.

olive juice (i love you)

As a Southern girl and a recent Southern bride, I am a huge fan of Tara Guerard and Soiree Charleston. Tara’s book, Southern Weddings, has become my all time favorite wedding book because of the beautiful event design and perfect detailed photography by Liz Banfield.

Tara’s invitation company, The Lettered Olive is just as impressive. When Todd and I got engaged, I immediately called The Lettered Olive for ideas. The Lettered Olive designed the most inspiring “dinner and dancing” card that I’m so fond of.

They had not yet launched their website at that time, but I had seen plenty of their work in MSW and InStyle Weddings. We quickly decided that we weren’t prepared to pay such a pretty penny for their gorgeous, custom, one of a kind letter press, but I’m confident it would have been worth it. Tara is a genius at branding events and she really accomplishes that with all of this beautiful letterpress. You can browse the website by looking at the collection, but you will really drift off into dream world when you see the custom section. If you dare to venture to the website I promise you will spend hours there dreaming of your wedding invitations, engagement party invitations, shower invitations for your best friend, baby announcements, Christmas cards, and any other excuse to order such gorgeous paper!

Those girls are pretty incredible. Two of their contests ended last night and I’m especially excited to see how the Design Carrie’s Wedding Contest turns out. I didn’t enter or anything, but I’ve seen some previews and they’re pretty amazing and very thorough! I love it that all of the SATC lovers really know those 4 women!
