triple berry cobbler recipe

Last year, the girls in our Sunday school class compiled a bunch of recipes that we all love into a mini cookbook. The idea was for us to help each other with meal planning and it was a lot of fun sharing recipes. Some of my favorite recipes come from that little cookbook and this Triple Berry Cobbler recipe is one of them. My friend, Emily submitted it and I made it a few times last summer and had almost forgotten about it. So I made it tonight!

I had all this gorgeous fresh fruit in my refrigerator and wanted to bake something and then watch Mad Men. And open a bottle of Santa Margherita.

The recipe calls for frozen berries (probably in case they’re out of season), but I had packages of fresh strawberries, blackberries, and blueberries in the refrigerator so I used those.

Ingredients

1 12 oz package frozen blueberries (or fresh blueberries)

1 12 oz package frozen raspberries (or fresh raspberries)– I don’t care for raspberries, so I use strawberries instead

1 12 oz package frozen blackberries (or fresh blackberries)

1 1/2 cups sugar

1/2 cup all purpose flour

1/4 cup butter, melted

1 t vanilla extract

1 package refrigerated pie crust (with 2 crusts in the package)– or make it from scratch if you can or have the time

1 large egg, beaten

1 T sugar

Instructions

Stir together first 7 ingredient in large bowl until just combined

Spoon into greased 13 x 9 inch baking dish

Roll 1 piecrust to fit baking dish, place on top of berry mixture

Cut remaining piecrust into 1/2 strips and arrange strips in lattice design over piecrust

Brush with egg, and sprinkle with 1 T sugar

Bake at 400 for 55-60 minutes until golden and bubbly.

Top with Blue Bell vanilla bean ice cream because that’s how your husband loves it and enjoy!

    That cobbler looks so good! I love to eat cobblers with vanilla ice cream! I also don’t like raspberries. I really thought I would, but I thought there was a weird aftertaste!!

    I am catching up in my reader so this comment is actually in response to the book club comment from a couple of days ago. However, I am in a book club and I love it! I can’t recommend it enough. You read so many books that you would never choose for yourself. My experience is that usually those are the best ones. Also you make wonderful friends. Mine is a little funny I am the only person under the age of 50. Most of the club is retired and we have 5 out of 15 members in their 80’s! I always forget how old they are until one starts to say, “when I was a kid during the great depression…” It’s wonderful to have so many different experiences and perspectives in a room. It brings so much richness to the books you read. Either way I don’t think it takes you to a “new sahm status”. And if it did who cares, you love to read and books clubs are fun. Besides there is always yummy food and wine!

    I just popped this in the oven and it looks fabulous and was so easy! I used blueberries (fresh and frozen) and plums since that’s what I had. Can’t wait to try it. Thanks for posting!

    Erin, I’ve been meaning to comment on this post for a couple of weeks now. I just wanted to say thank you for the recipe and the insipration! My mom and I made this cobbler, with a few adjustments of our own, and it was fabulous! Our grocery store didn’t have fresh blueberries or raspberries, very strange and dissapointing! So we used strawberries, half a carton of blueberries already in the fridge at home, blackberries and added 4 peaches! The peaches were by far the BEST part! Also, we only used one crust for a lattice on top. Oh! I almost forgot, we added cinnamon! A dash into the cobbler and also sprinkled on top along with the sugar. This cobbler was to die for! Thank you for sharing with us! Happy Cooking! PS: Homemade Lemon Frozen Yogurt on the side was the perfect sweet and tart combo!
